Step 1: Preheat your oven to 220°C or 200°C fan (425°F or 400°F). Line your baking sheet with parchment paper (or foil).

Step 2: Wash your vegetables (or, not… if they were previously frozen) and dice them into 1/2″ cubes or 1 cm rounds & halves.

Should You Thaw Frozen Vegetables Before Roasting?

No, you don’t have to. You can roast frozen veggies directly. However, it might take slightly longer compared to fresh veggies. Dusting off any excess ice crystals can prevent them from becoming soggy and is a pro move.

Step 3: Add the mixed vegetables to your bowl and toss them with olive oil until fully coated. Now add your Cajun seasoning, smoked paprika, salt, pepper, and minced garlic. Toss again until coated evenly.

Step 4: Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper (or foil) in a single layer.

A single layer (no overlapping) allows the air to properly circulate around every vegetable giving it that delectable “crisp” instead of steaming them.

Step 5: Place the tray of smoky cajun vegetables in the oven to roast for 25 minutes (30 minutes if roasting from frozen). Set your timer for 15 minutes in preparation to toss or turn about halfway through for an even roast.

Step 6: Toss or turn your veggies when the timer goes off to get an even roast. Set your timer for 10 more minutes.

Step 7: Remove your smoky cajun roasted vegetables when they’re slightly charred, plate them, and zest with lemon to taste.

This is my smoky recipe for Cajun roasted veggies

  • 450 g 450 Mixed Vegetables (Peppers, Sweet Potato, Courgette/Zucchini, Aubergine/Egg Plant) in Chunks

  • 3 tbsp 3 tbsp Olive Oil

  • 2 tbsp 2 tbsp Cajun Seasoning

  • 1 tsp 1 tsp Smoked Paprika

  • Salt

  • Black Pepper

  • 1 1 Garlic Clove, Crushed

  • 1 1 Lemon, Zest Only


  • Preheat
    Preheat your oven to 220°C or 200°C fan (425°F or 400°F).
  • Toss
    In a large bowl, toss the mixed vegetables with olive oil, Cajun seasoning, smoked paprika, salt, pepper, and minced garlic.
  • Spread
    Spread the seasoned vegetables on a baking sheet lined with parchment paper (foil is an acceptable substitute) in a single layer.
  • Roast
    Roast for 25-30 minutes, turning halfway through, until the vegetables are tender and slightly charred.
  • Dress
    After removing from the oven, zest a lemon over the roasted vegetables for added freshness.
