If you’re planning to bake and then freeze your carrot cake, it’s best to freeze it in two parts. The sponge should be frozen separately from the cream cheese topping to ensure your cake doesn’t go soggy in the freezer.

Below are the steps you need to follow to freeze carrot cake. 

  1. Allow to Cool
    After baking the base of your cake, you will need to allow it to cool before you try and freeze it. This can take a few hours, so let it cool on the worktop before transferring it to the freezer. 
  2. Wrap Base
    Once your base has cooled, wrap it well in cling film. You can then place it in an appropriately sized freezer-safe bag before leaving it to one side. 
  3. Bag Up Topping
    Next, scoop your cream cheese topping into a freezer-safe bag. Push out as much air as possible before sealing. 
  4. Label and Freeze
    On the front of each bag, write the date that you prepared the carrot cake, as well as its recommended use-by date. Remember, you can freeze carrot cake for around four months.
