How to Freeze Ceviche
Before freezing ceviche, you must ensure that it’s as fresh as possible.
We recommend smelling the ceviche and seeing if it smells fishy, at all. If the smell is particularly pungent, it’s worth throwing out the food – that is an indicator that the fish has spoiled and shouldn’t be consumed.
- Drain: After you’ve made sure that the ceviche is as fresh as possible, drain it. Upend the bowl you’re working with into a colander or a sieve. Allow it to stand and let all the liquid drain off.
- Bag Up: After the food has been drained, transfer it to a freezer bag, ensuring there are no major air bubbles within the bag. Knock the bag against the counter a few times, while it’s still open, in order to help the ceviche settle in the bag.
- Seal: Then, press out as much air as possible from the bag before sealing. Removing air from the bag is essential because, in the freezer, air will condense, which will then freeze into ice, which will rupture the cells within the seafood that you’re freezing.
- Freeze: After the bag is sealed, transfer it to the freezer, making sure to write the correct date on the bag. Store ceviche toward the centre of the freezer, as that will prevent it from getting freezer burn.

Keep in the Centre of the Freezer
Storing ceviche toward the centre of the freezer is wise, as it will allow for freezer burn to set into things outside of the ceviche first before they eventually start to impact the ceviche. Hopefully, by the time that happens, you’ll have eaten the ceviche already.
Stick to Fresh Seafood
Allowing seafood to spoil cannot be reversed, just like any other type of food. The frustrating thing, however, is that it’s tougher to use up slightly spoiled seafood than it is vegetables, for example, since the flavour degrades so much. So only freeze the freshest fish as possible.
Don’t Allow It To Get Crushed
While it’s still freezing, don’t put heavy things on top of the ceviche. If it gets crushed, fluids from the food will leak into the bag, which can freeze solid and cause freezer burn over time.
How Long Can You Freeze Ceviche?
You can freeze ceviche for around a month or so. When you’re freezing fresh fish with your home freezer, that’s around the maximum we recommend.
You can freeze supermarket fish for longer because that has been industrially deep-frozen in a much colder freezer than a domestic one.
Ceviche will last for around 2 days in an airtight container. The acid will continue to cook the fish in the fridge, which can cause it to drastically over-cure and fry out.
How Do You Defrost Ceviche?
The simplest way to defrost ceviche is to allow it to sit in your fridge overnight. Ceviche shouldn’t be stored at room temperature since bacterial growth will occur rapidly.
Thawing it in the microwave is also not feasible, for obvious reasons!
Can You Refreeze Ceviche?
Yes, you can, technically refreeze ceviche.
However, we would wholeheartedly advise against it – as it is seafood, ceviche is exceptionally prone to freezer burn, and can be impacted negatively by repeated freezing.
