Freezing the croissant dough ahead of time can be a huge time saver as, although enjoyable, the process of making croissant dough can be very time consuming and quite technical.

This is because you have to not only make the basic dough but also have to laminate it with butter and allow it to prove.

Freezing the dough can skip this part, meaning you can just pull out pre-made croissants from the freezer, whack them in the oven and hey presto, fresh croissants!

  1. Make Croissant Dough
    Make your croissant dough by using your favourite recipe. 
  2. Shape
    Follow the recipe up until the point where you would put them in the oven. This includes shaping them into their desired form.
  3. Grab a Baking Tray
    Find a large baking tray and line with greaseproof paper.
  4. Lay Out Croissants
    Place your shaped croissants out on the baking tray, leaving a little gap between each of them so that they don’t stick to each other. 
  5. Cover and Freeze
    Cover the baking tray, though not too tightly, and slide into the freezer for 2 hours. 
  6. Remove and Bag
    After 2 hours, remove the tray from the freezer and place the now frozen croissants into freezer safe bags or containers. 
  7. Freeze Again
    Immediately place back into the freezer and freeze for up to 6 months.

Wrap Well
You do need to make that your croissant doughs are stored well. This is the secret to keeping them tasting as delicious as possible. You can either wrap each one in cling film or place it in a freezer-safe bag, but you can always add a layer of tin foil too. This adds a little extra insulation and ensures the croissants are kept airtight.

Choose Your Freezer Space Wisely
When freezing the croissant dough for the first time, be sure to place them in the freezer where nothing will fall on them or squash them. If the dough gets squashed, it will not rise when baked, leading to a very chewy and thick piece of cooked dough.

Try Freeze Other Croissants
It is not just butter croissants that can be frozen to enjoy at a later date. You can also freeze pain au chocolat dough or flavour your butter croissant dough with a cinnamon filling.

Croissant dough can last in the freezer for up to 6 months. After this, the pastry may start to deteriorate and, as always, it is better to use up the food product sooner rather than later. Shouldn’t be too hard to do with delicious croissants!

Thankfully, it is really easy to defrost croissant dough. Simply remove the desired amount of croissants from the freezer and place them into the fridge.

Allow them to thaw overnight and then bake as if they had just been made fresh. You could even do an egg wash on top to create a nice shiny top.

Unfortunately, you cannot refreeze croissant dough that has already been thawed. The pastry will have risen slightly as it has thawed, and then it is not suitable for refreezing as the texture will have deteriorated too much to be enjoyable.

Homemade croissant dough that has not been baked can be frozen and they freeze very well.

Any changes to the texture won’t be noticed by the time you have baked them and they will taste just as delicious as if they had been made and baked fresh that day.
