This is a basic, simple pasta sauce recipe that packs plenty of sweet tomato flavour.

  • 4tbsp Olive Oil

  • 2 Onions, Finely Chopped

  • 3 Celery Sticks, Finely Chopped

  • 3 Carrots, Finely Chopped

  • 3 Garlic Cloves, Crushed

  • 1 Bunch of Basil Leaves

  • 2 Bay Leaves

  • 1tsp Dried Chilli Flakes, Optional

  • 2tsp Sugar

  • 4 Tins Chopped Tomatoes

  • Salt

  • Black Pepper


  • Heat the olive oil in a large pan over a medium heat, and then add all the vegetables. Add a pinch of salt and then cook, stirring regularly, until the vegetables have softened a little.
  • Add the bunch of basil leaves, bay leaves and chilli flakes and stir before adding in all of the tomatoes with another pinch of salt, a pinch of sugar and a good seasoning of black pepper.
  • Fill one tin with water and tip this into the pan. Stir everything, then reduce the heat to low. Cook for 30 minutes, stirring occasionally.
  • After 30 minutes, check the consistency and then taste. Add another twist of black pepper or salt if required.
