A roulade is a hugely popular dessert, whether filled with chocolate, cream, fruit or jam. But, if you’ve got a portion left over (or want to get ahead), how can you store it?

Can You Freeze Roulade?

Yes, you can freeze roulade for up to 1 month. The best way to do this is to set the roulade on a lined baking tray and place it in the freezer. Once the roulade is solid and firm, you can wrap it in cling film, and freeze it.

How to Freeze Roulade

Freezing roulade isn’t too tricky, but we end up mixing a couple of techniques to ensure the roulade is well-preserved in your freezer. Follow our steps to make sure you nail it the first time!

  1. Place on a Tray: Line a baking tray with greaseproof paper or baking paper, ensuring there will be no point at which the roulade would touch the tray without touching the paper, then pop the roulade on the tray.
  2. Freeze: Freezing the whole roulade is a great way to be sure that you make it a good texture for firmly wrapping. Flash-freeze it on the baking tray for one to two hours or until it’s solid and doesn’t get squashed when you press it gently.
  3. Wrap: Remove the solid roulade from the baking tray, and transfer it to a sheet of cling film. Tightly wrap the roulade around, removing any excess air as you go.
  4. Freeze: Label the roulade with the correct date to avoid leaving it for too long, and then transfer it to the centre of your freezer.

3 Tips for Freezing Roulade

Now you know how to freeze it, we’ve got our 3 top tips which we strongly recommend following when freezing roulade to have the best results:

Thaw Before Slicing
If you try to slice through the frozen roulade with a serrated blade, you will likely end up crumbling it on the chopping board. Avoid that by totally thawing it before you slice it with a sharp, straight blade.

Consider the Water Content
The higher the water content, the greater the risk of freezer burn. If you’re freezing jam, or something similar, the water content might turn into ice, leading to freezer burn in the roulade. You could, instead, freeze more conventional whipped cream.

Double Wrap
Wrapping the roulade in two layers of cling film can lead to more effective protection from freezer burn since you’re creating a thin layer of air that will insulate the roulade slightly.

How Long Can You Freeze Roulade?

You can freeze roulade for up to 1 month. The reason that we wouldn’t recommend any longer than this is that the roulade contains a lot of tiny air bubbles from the process of baking.

These tiny air bubbles can condense and freeze, given enough time, which would likely lead to a freezer-burned final meal. This is certainly not ideal, as it would ruin the texture of your dessert!

How Long Does Roulade Last in the Fridge?

You can keep a roulade in the fridge for 2 to 3 days. It should be wrapped tightly in clingfilm and then placed on a plate.

How Do You Defrost Roulade?

The simplest way to defrost roulade is to unwrap it and place it on a plate in the fridge overnight. The roulade will thaw overnight, and any spoilable ingredients, such as cream, will then be kept at a food-safe temperature.

Can You Refreeze Roulade?

Yes, you can refreeze roulade.

You can refreeze roulade because it doesn’t contain any ingredients that are very susceptible to bacterial growth while out of the freezer.

Generally, we would say that the main danger ingredients in this sense are meat, fish, and raw dairy.

Does Roulade Freeze Well?

Yes, roulade does freeze well. The main reason for this is that throughout the roulade there is relatively little in the way of water or air pockets. Therefore, the roulade itself won’t become freezer burned very quickly.

The sponge cake portion of the roulade can become freezer burned, however, due to the air bubbles within any good sponge cake. To avoid that being an issue, make sure to only have the roulade frozen for a total of around a month.

If you’ve still got questions about freezing roulade or roulade in general, then these may help:

Can You Freeze Chocolate Roulade?

Yes, a roulade made with a chocolate sponge cake can be frozen just like one made with a standard, plain sponge. It will need to be wrapped tight to keep it airtight and can be frozen for around 1 month.

Can You Freeze Savoury Roulade?

Yes, roulade with any filling can be frozen. You need to consider your weakest ingredient in the filling as this will limit how long you can freeze it for. High cheese fillings, for example, will not freeze well.
