Samosas, alongside onion bhajis and pakoras, have got to be some of the most popular fried Indian goods. But, what happens if you’ve made a few too many?

How to Freeze Samosas

Freezing samosas is a simple process, but it’s not very intuitive. To ensure you freeze your samosas as well as possible, follow our steps:

  1. Bag Up: Open the freezer bag you’re using, and place the samosas one by one, on their side. Ensure they’re flat, so the samosa’s flat sides touch the freezer bag’s interior plastic.
  2. Spread: While stacking the samosas, bear in mind that the only portions likely to get stuck to one another are the flat sides of the pastry. Allow the points and edges to touch one another, making them less likely to get stuck. If they do get stuck, it should be pretty easy to snap them apart from one another.
  3. Remove Air and Seal: Press as much excess air out of the bag as possible, being sure not to squash the samosas. Be firm, but don’t crush the pastry – samosas are hard to make, and you don’t want to ruin them!
  4. Freeze: Freeze the bag of samosas flat in your freezer, as that will prevent the individual samosas from sliding over one another and overlapping.

Ensure the Bag is Dry
The pastry used for samosas is very dry and is built up in several layers. This means that any level of moisture can damage the structure of the pastry, making it very weak. To ensure that the pastry doesn’t get damaged, be sure that the bags you use as totally dry. 

Avoid Freezing Broken Pastry
If a samosa has a broken pastry layer, then the moisture from within the filling can seep to the outside. If this happens, it’s the same negative effect from the first tip – the pastry will become weak, making for a poor final samosa. 

Fry Before Freezing
If you’re making samosas to freeze them at a later date, we recommend partially frying them just until they’re crispy on the outside. Then, before serving, thaw them completely, and fry them to a golden colour.

You can freeze samosas very well for up to 6 months.

The reason for this is that there’s typically very little air in a samosa, meaning that it’s rare for them to get any level of condensation or freezer burns within themselves.
